Global's 3 Piece 25th Anniversary Set. This modern knife set comes in 25th Anniversary logo box with Global lapel pin. Set includes: Global's popular (G-4) oriental chef's knife 7-Inch plus two brand new Global shapes. The Global (GS-54) santoku 4-1/2-Inch is terrific for small board work such as slicing shallots and chives and the Global (GS-58) oriental utility knife 4-1/2-Inch is great for peeling tough skinned ingredients like sweet potatoes. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 stainless steel, a blend of 18-Percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

Wenger Grand Maitre 4.7-Inch Japanese Chef's Knife with Granton Edge

Wenger Grand Maitre 4.7-Inch Japanese Chef's Knife with Granton Edge Review

Wenger Grand Maitre 4.7-Inch Japanese Chef's Knife with Granton Edge Feature

  • Made in Switzerland by Wenger; each knife is individually sharpened, polished and inspected by hand
  • 4.7-Inch Japanese knife has a 15 degree single bevel edge with granton blade. An all-purpose knife for cutting meats, vegetables, and fish; granton blade helps prevent food from sticking
  • Blade is made of custom blended stainless steel that features an optimal combination of strength and flexibility, wear/corrosion resistance, and a long- lasting edge
  • Ergonomic handle made from Polyamide 6 is: non-slip, non- porous, heat resistant and hermetically sealed to blade to prohibit debris or germ accumulation
  • Professional quality, dishwasher and sterilization safe
We may be new to your kitchen, but you've trusted us in your pocket for over 100 years. Whether you're a professional chef or amateur cook, you know that the best tools and ingredients are important for a successful experience. With over century of experience of producing the Genuine Swiss Army Knife, Wenger has channeled its expertise and technology to produce the Grand Maitre Collection. Entirely Swiss made, with a particular attention to detail, Wenger has set the industry standard of manufacturing stamped knives. When producing a stamped blade knife, the blade is cut out of a sheet of high quality stainless steel then tempered, ground, polished and sharpened. The result is a knife that is flatter and lighter than forged knives, which reduces hand fatigue with long or repetitive use. Wenger uses a custom blended stainless steel with an optimal combination of strength and flexibility, (Rockwell hardness tested between 55-58 depending on the specific knife and its function), wear/corrosion resistance, and a long- lasting edge (the edge angle varies between 25 and 30 degrees, depending on the specific knife and its function). Every single knife is sharpened and polished by hand. Each knife is also individually inspected before and after the sharpening process. The handle is ergonomically designed, comfortable and non-slip even when wet. The handle is made from Polyamide 6; is non- porous and resistant to high temperatures. A hermetic seal between the handle and blade prohibits debris or germs from accumulating. Grand Maitre was recently the highest rated knife, (judged on versatility, steel composition, edge sharpness, and wear resistance) by the Swiss consumer program A Bon Entendeur. The 4.7 inch Japanese knife is a compact, all-purpose knife for cutting meats, vegetables, and fish. It features a granton blade edge, which helps prevent food from sticking after slicing.

Zwilling J.A. Henckels Twin Cuisine 2-Piece Deluxe Asian Set

Zwilling J.A. Henckels Twin Cuisine 2-Piece Deluxe Asian Set Review

Zwilling J.A. Henckels Twin Cuisine 2-Piece Deluxe Asian Set Feature

  • 2-piece deluxe Asian set consists of 7-inch santoku and 3-inch kudamono parer
  • Henckels's exclusive full horizontal tang provides precision weight and balance
  • Friodur ice-hardened blade made from high-carbon, no-stain steel
  • Molded ergonomic handle without rivets or gaps for ultimate comfort
  • Made in Germany; wash by hand; lifetime warranty
One of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. With no rivets or gaps, the ergonomic handle provides seamless comfort, while the full tang adds weight for precision balance. The single-piece blade, forged from high-carbon, no-stain steel and strengthened in Henckels's exclusive Friodur ice-hardening process, retains its sharp edge through extensive cutting and chopping. Made in Germany and covered by a lifetime warranty, Twin Cuisine knives are dishwasher-safe but are best cared for when washed and dried by hand.

This two-knife deluxe set consists of a 7-inch, hollow-edge Asian-style chef's knife called a santoku, and a 3-inch kudamono hollow-edge paring knife. The santoku, once unusual, is now a standard kitchen knife in many American homes because of the popularity of sushi and other Asian delicacies. The kudamono parer is a smaller version of the santoku, excellent for fruit and vegetable peeling, slicing, and garnishing. Both feature hollowed-out ovals along the razor-sharp edge to reduce friction during cutting, resulting in paper-thin slices of fish, meat, or vegetables. Together, the knives make a superb set for the chef who especially enjoys preparing Asian cuisine. --Ann Bieri

Bunmei 1804/270 - 10 1/2 inch Yanagi Sashimi Knife Review

Bunmei 1804/270 - 10 1/2 inch Yanagi Sashimi Knife Feature

  • Narrow 10-1/2-inch blade for filleting, slicing fish
  • Provides clean, low-friction cutting
  • Blade made of high-tech molybdenum/vanadium stainless steel
  • Edge retains razor sharpness exceptionally well
  • Traditional wood handle with ridge for secure grip
Thick at the back and blunt at the end, the narrow 10-1/2-inch blade on this professional-quality Japanese yanagi knife is designed to precisely fillet and slice fish. (Yanagi is the Western Japanese name; in Eastern Japan this type of fish knife would be called a takohiki--or tako--and would have a blunt end.) The shape, weight, and wood handle, which has a ridge to ensure a secure grip, are all traditional. But the blade is made of thoroughly modern, extra-hard, molybdenum/vanadium stainless steel so it retains its edge longer than high-carbon stainless-steel blades. For clean, low-friction cutting, the edge is "face-ground" on the right side only with a long taper at an acute angle and comes from the factory razor sharp. This knife should be honed only with a synthetic whetstone or a ceramic whetstone and hand washed. --Fred Brack Yanagi are traditional sushi knives traditionally used in the northern regions of Japan. Characteristics of a sushi knife are a very long blade with a slightly curved belly, and Yanagi have a slight dropped point resulting in a midline tip. Bunmei features the single-sided grind that is distinctive of Japanese chef's cutlery. 10-1/2 inch stainless steel blade Handmade quality Bamboo handle
