Shun Ken Onion DM0513 Serrated 5-Inch Utility Knife

Shun Ken Onion DM0513 Serrated 5-Inch Utility Knife Review

Shun Ken Onion DM0513 Serrated 5-Inch Utility Knife Feature

  • 5-inch Shun serrated utility knife with ergonomic Ken Onion-designed handle
  • Handcrafted in Japan of incredibly sharp, strong VG-10 steel
  • Beautiful black Pakkawood handle provides tension-free control
  • Damascus-style ripples on blade help release food; sharp tip for cutting
  • Wash by hand; lifetime warranty; gift-boxed
This five-inch serrated utility knife combines Shun technology and a lusciously curved black handle by award-winning custom knife designer Ken Onion. Made of a hardwood-resin fusion known as Pakkawood, the handle is designed to be truly ergonomic in order to increase control and reduce fatigue during long stretches of chopping, mincing, and slicing. The Damascus-style ripples on the blade create air pockets that release food quickly, and the pointed tip aids in digging out potato eyes or fruit blemishes. The serrated edge is excellent for slicing bread, tomatoes, and cheese, and any home chef who loves creating gourmet sandwiches would be honored to receive this gift-boxed beauty.

Shun knives, made in Japan by KAI (Kershaw Cutlery), are quite possibly the sharpest knives on the market. A Shun edge, formed to an acute 16-degree angle, won't bend or waver due to the hardness of the VG-10 steel core used in its construction. Clad with 32 layers of high-carbon stainless steel (16 on each side), the blade resists rusting and maintain its razor edge for a considerable time. Prized among chefs who value uniformly thin slices, a necessity in Japanese cuisine, Shun knives are covered by a lifetime warranty and should be washed and dried-carefully-by hand, then stored in a wooden block. --Ann Bieri Ken Onion Series combine the non-stick VG-10 blade with Ken Onion's signature ergonomic handle design and the unique blade sweep found only in a Ken Onion knife. The result is a series of knives that are not only beautiful to look at, but a pleasure to use.The Ken Onion features the same clad VG-10 blade made famous in the Shun line. This nonstick blade is extremely sharp and durable-ideal for slicing and dicing.

Haiku Original 6" Santoku Knife

Haiku Original 6" Santoku Knife Review

H17 Haiku, the traditional knife-line by Chroma Cutlery, Inc. Haiku knives are manufactured in small Japanese knife factories out of high-grade modern steel. Borrowing from an ancient method, a bamboo peg (''mekugi'') is inserted from the side into every Haiku knife where the tang and handle are joined for added stability. Traditional sword smiths in Japan use this time-tested technique when crafting swords like those once used by the samurai of medieval Japan. Haiku - the Japanese knife with the honoki-wood handle. Features : -Santoku Knife. -Extremely sharp blades. -Designed for quick and easy sharpening. -Overall dimensions : 15'' H x 3.5'' W x 1'' D. Please note the following instructions to insure the knife remains in optimal condition for years to come: -Please take special care when using them(Keep them away from children). -Never wash Haiku knives in the dishwasher, the aggressive detergents and heat damage the steel and the honoki wood. -Always wash the knife in warm water and dry it by hand after every use. Such care insures life-long reliability of Haiku. -Do not cut bone or another hard materials with Haiku knives. A cleaver should be used for such tasks. -A Haiku knife needs to be sharpened at home to stay sharp a long time. Use the Haiku whetstone for best results; if necessary another ceramic whetstone may be used. In a desperate situation, draw the knife's edge over the bottom of an unglazed porcelain bowl to sharpen. Please never use a sharpening-steel, as it will damage the fine Haiku edge.

Masahiro MV-H 7 inch Chef's Knife

Masahiro MV-H 7 inch Chef's Knife Review

Masahiro MV-H 7 inch Chef's Knife Feature

  • Thin blade
  • Tapered style edge
  • Perfectly balanced
  • Amazingly light weight
  • Smooth and very comfortable handle
The most prestigious knife brands in Japan are Masahiro, Masamoto, and Misono. Together they form an elite group known as the three M¿s. Masahiro MV-H knives are produced by Masahiro Co., Ltd. in Seki, Japan. Among the numerous ranges of knives produced by Masahiro, the MV-H range is the top of the line. It is indisputably the best range from one of the best factories in Japan. The cutting edge is asymmetrical: 80% on the right side of the blade and 20% on the left side, then polished to a mirror finish. This tapered style edge takes pressure off food for a perfect finished cut. This asymmetrical edge is derived from traditional one-sided Japanese knives which are also 80/20 asymmetrical. The 80 percent side on the MV-H is only ¼¿ high as compared to the ¾¿ on a traditional Japanese knife, but the idea is the same. An asymmetrical edge is approximately 35% thinner than a 50/50 straight edge. The Masahiro knives are amazingly light weight, yet perfectly balanced. The handle is a composition plastic handle which is remarkably durable and is much more practical and longer lasting than a laminated wood handle. The composite handle is resistant to bacteria, which keeps the knife very hygienic in daily use. The handles are a three rivet design and use a very wide full tang, almost as wide as the handles themselves. This design provides plenty of room for the rivets and still allows room for the handle to cover the tang, which results in an incredibly smooth rounded handle that feels great in your hand. The MV-H range is made from MBS-26 high carbon stainless steel. This MBS-26 is proprietary to Masahiro; however, it comes from the VG family like VG-10 that the Kasumi Damascus knives first used. The MBS-26 stainless steel is treated by three stages of quenching, sub-zero treating and tempering until the steel reaches a hardness of 58-60 HRC. Masahiro believes this is the ideal hardness the for a kitchen knife with the features of the MV-H.
