  • 1 each: 9-3/4-inch dinner knife; 8-3/8-inch dinner fork; 7-1/4-inch salad fork; 8-inch soup spoon; 6-3/8-inch teaspoon
  • 18/0 mirror-finish stainless steel

Linden is about as easy-going and uncomplicated as flatware comes. Large in size-the dinner knife measures almost ten inches-Linden is not intimated by formal, oversized dinner plates. This is a moderately priced pattern that will suit almost any occasion or décor.

Included in this 20-piece set are four place settings, each consisting of a 9-3/4-inch dinner knife, 8-3/8-inch dinner fork, 7-1/4-inch salad fork, 8-inch soup spoon, and 6-3/8-inch teaspoon. A four-piece hostess set and accessory pieces are available separately to complete a well-coordinated table. Made of mirror-finish 18/10 stainless steel that won't tarnish, Linden is conveniently safe for the dishwasher, although soaking in water and prolonged exposure to acidic foods should be avoided to prevent spotting. Shun Ken Onion DM0504 10-Inch Slicing Knife

Shun Ken Onion DM0504 10-Inch Slicing Knife Review

Shun Ken Onion DM0504 10-Inch Slicing Knife Feature

  • 10-inch Shun slicing knife with ergonomic Ken Onion-designed handle
  • Handcrafted in Japan of incredibly sharp, strong VG-10 steel
  • Beautiful black Pakkawood handle provides tension-free control
  • Damascus-style ripples on blade help release food for clean, swift cutting
  • Wash by hand; lifetime warranty; gift-boxed
This 10-inch slicing knife combines Shun technology and a lusciously curved black handle by award-winning custom knife designer Ken Onion. Made of a hardwood-resin fusion known as Pakkawood, the handle is designed to be truly ergonomic in order to increase control and reduce fatigue during long stretches of use. The Damascus-style ripples on the upturned blade create air pockets that release food quickly, allowing clean, thin slicing of any roast meat. A bit daunting at first use, the large knife soon feels indispensable. Any chef would be honored to receive this gift-boxed beauty.

Shun knives, made in Japan by KAI (Kershaw Cutlery), are quite possibly the sharpest knives on the market. A Shun edge, formed to an acute 16-degree angle, won't bend or waver due to the hardness of the VG-10 steel core used in its construction. Clad with 32 layers of high-carbon stainless steel (16 on each side), the blade resists rusting and maintain its razor edge for a considerable time. Prized among chefs who value uniformly thin slices, a necessity in Japanese cuisine, Shun knives are covered by a lifetime warranty and should be washed and dried-carefully-by hand, then stored in a wooden block. --Ann Bieri

Masahiro MV-H 6 inch Utility Knife

Masahiro MV-H 6 inch Utility Knife Review

Masahiro MV-H 6 inch Utility Knife Feature

  • Thin blade
  • Tapered style edge
  • Perfectly balanced
  • Amazingly light weight
  • Smooth and very comfortable handle
The most prestigious knife brands in Japan are Masahiro, Masamoto, and Misono. Together they form an elite group known as the three M¿s. Masahiro MV-H knives are produced by Masahiro Co., Ltd. in Seki, Japan. Among the numerous ranges of knives produced by Masahiro, the MV-H range is the top of the line. It is indisputably the best range from one of the best factories in Japan. The cutting edge is asymmetrical: 80% on the right side of the blade and 20% on the left side, then polished to a mirror finish. This tapered style edge takes pressure off food for a perfect finished cut. This asymmetrical edge is derived from traditional one-sided Japanese knives which are also 80/20 asymmetrical. The 80 percent side on the MV-H is only ¼¿ high as compared to the ¾¿ on a traditional Japanese knife, but the idea is the same. An asymmetrical edge is approximately 35% thinner than a 50/50 straight edge. The Masahiro knives are amazingly light weight, yet perfectly balanced. The handle is a composition plastic handle which is remarkably durable and is much more practical and longer lasting than a laminated wood handle. The composite handle is resistant to bacteria, which keeps the knife very hygienic in daily use. The handles are a three rivet design and use a very wide full tang, almost as wide as the handles themselves. This design provides plenty of room for the rivets and still allows room for the handle to cover the tang, which results in an incredibly smooth rounded handle that feels great in your hand. The MV-H range is made from MBS-26 high carbon stainless steel. This MBS-26 is proprietary to Masahiro; however, it comes from the VG family like VG-10 that the Kasumi Damascus knives first used. The MBS-26 stainless steel is treated by three stages of quenching, sub-zero treating and tempering until the steel reaches a hardness of 58-60 HRC. Masahiro believes this is the ideal hardness the for a kitchen knife with the features of the MV-H.

Global G-4 7-Inch Oriental Chef's Knife

Global G-4 7-Inch Oriental Chef's Knife Review

Global G-4 7-Inch Oriental Chef's Knife Feature

  • Lightweight, precisely balanced 7-inch Oriental chef's knife
  • Blade made of high-tech molybdenum/vanadium stainless steel
  • Edge retains razor sharpness exceptionally well
  • Stainless-steel handle molded for comfort, dimpled for safe grip
  • Lifetime warranty against defects and breakage
High-tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor sharp. Although Global also makes a heavyweight line for cooks who prefer hefty knives, its original knives--of which this 7-inch Oriental chef's knife (or santoku) is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Global achieves balance in these knives by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a cook maneuvers the blade. A finger notch between blade and handle provides safety.

Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp, and the seamless construction between handle and blade is more sanitary. This knife's wedge-shaped handle is particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen Sharpener. Global also makes a sharpening guide set so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack This 7-in. Asian Chef's Knife has a sharp upward curve and thicker "belly" than a traditional cook's knife. Great all purpose knife for cooks that like to chop or rock against the cutting board. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.
