Asian style knives differ from European/American style knives in that the blades often have a thinner cross section where the edge facets are formed. Additionally, each cutting edge facet is often set at a smaller angle. The Chef's Choice Sharpener for Asian knives, Model 315S, features advanced precision spring guides that are designed for the thinnest to the thickest of Asian blades, resulting in a double bevel facet edges each at approximately 15 degrees. The sharpener features a 2 stage sharpening process. The first stage hones each side of the edge with fine 100% diamond abrasives.
